For June, Ross Steidel, the master mixer behind Seattle- and Maui-based cocktail catering company Perfect Pour Cocktail Co., sets the bar high with eight boozy beauties to keep you and your guests sipping and swinging all evening long. "Another summertime staple, this cocktail is extremely refreshing with a good push of tartness to keep your blood sugar low. Tarragon, an anise/liquorice driven herb, pairs excellent with the molasses characteristics of cachaca and the gastrique. I would say this is one of our more interesting recipes." —Ross
- 1 oz. watermelon gastrique (sugar + molasses + palm or cane vinegar + watermelon)
- 0.50 oz. watermelon juice
- 0.75 oz. lime juice
- 0.75 oz. Espolon Tequila Blanco
- 0.75 oz. Leblon Cachaca
- 0.50 oz sparkling water
- 1 pinch of sea salt
- 12 tarragon leaves (about one sprig)
