11 Ways to Serve Spiked Popsicles at Your Wedding—or Anytime!

Spiked popsicles have been all the rage this summer. We’ve seen them adorned with fresh fruit, dipped in rosé, and even popping up at the beach—no pun intended. Now you can transform your favorite cocktails into ice pops! If you’re not quite sold on these fun summertime desserts, try these recipes at home first. Just grab some popsicle molds (silicone is best for easy removal) and add ingredients for your signature drinks, then embrace your inner mixologist. When you debut these at your wedding (or bachelorette weekend, or backyard barbecue) your guests will be impressed...and tipsy too.

For the best results, mix wet ingredients in a container with a spout; pour into popsicle molds, filling them only three quarters of the way up (the liquid will expand as it freezes!); add fruit to the mold and place in the freezer for at least five hours. Remember: For every cup of non-booze, use 1.5 ounces (1 shot glass) of alcohol.

Pro tip: Freeze the liquid for 30–40 minutes before adding sticks. This way, they’ll slide into the slushy mixture and still be upright by the time they’re solid and ready for serving. Eat immediately or place in large plastic freezer bags if you want to save the spiked popsicles for later.
