Dessert designer to the stars, Sylvia Weinstock creates jaw-droppingly gorgeous cakes embellished in the most stunning sugar flowers. She only uses buttercream to frost her confections (not fondant), so air-conditioning is a must to ensure it won't melt.

Brooklyn-based industry vet Cheryl Kleinman sculpts her chic, streamlined cakes using fondant, marzipan, and buttercream icing; inside, you'll find delectable flavors like hazelnut-almond, apricot pound cake, and old-fashioned banana.

Emily Aumiller of Lael Cakes proves that vegan and gluten-free confections can taste (and look!) delicious. Her beautiful wedding cakes are made using alternative flours like millet, tapioca, and brown rice, and she makes her food-coloring dyes from scratch (her red-velvet cake gets its color from fresh beet juice!).
