1 ½ oz. rosemary-infused gin
(optional; see recipe at right)
¾ oz. Clover Honey Syrup
½ oz. freshly squeezed lemon juice
½ oz. freshly squeezed grapefruit juice
Combine all ingredients in a shaker and add ice. Shake vigorously and strain into an ice-filled Mason jar. Top with club soda. Garnish with a lemon wheel and a sprig of rosemary.

1 750ml bottle of dry gin
4 eight-inch-long sprigs of rosemary
Combine rosemary sprigs and gin in a large glass container and seal. Refrigerate container for 48 hours, shaking contents periodically. Strain liquid with a fine-mesh strainer and funnel into original gin bottle.
