You can take a girl out of Latin America, but if Eve is any indication, you can't take Latin America out of the girl. The daughter of a diplomat, Eve grew up in Panama, Nicaragua, Costa Rica, and Columbia, and eventually came to know a particularly charming little corner of Mexico: San Miguel de Allende, a storied artists' colony filled with romantic plazas and ornate churches.

When she became engaged to Kurt (they met on a blind date), deciding where to wed was easy. And once Eve discovered a hilltop hacienda opposite an old stone church, the rest of the details fell into place. A graphic designer, Eve created her own invitations in mustard yellow and brick red—"the colors of Mexico," she says. After a spicy dinner, guests danced the night away as pom-poms, balloons, and glow sticks were thrown to the crowd. ¡Viva el amor!
