Melon with Yellowfin Tuna Seviche

The ocean-inspired menu includes seviches, barbecued local prawns with tomato-tequila salsa, and homemade tortilla chips. For the fiery first course, pieces of grilled melon are topped with yellowfin-tuna seviche and chilies.
