Pineapple and lime juice pack this retro Cuban quencher with tropical punch.
- 2 oz. Bacardi 8 Year Rum
- 1 oz. pineapple juice
- ½ oz. fresh lime juice
- ½ oz. simple syrup
- ¼ oz. Marie Brizard Apry (apricot liqueur)
- Pineapple slice and leaves (for garnish)
To make simple syrup, bring 2 cups of sugar and 1 cup of water to a boil. Once the sugar has dissolved, remove from heat. Let cool to room temperature. Combine rum, juices, simple syrup and liqueur with ice in a cocktail shaker, and shake well. Strain into a martini glass. Garnish with pineapple and leaves.
