In fact, when a Benedictine monk named Dom Pérignon made wine in the 17th century, he was horrified to discover that the blends he and his fellow monks created had bubbles (which were considered a sign of bad winemaking). Dom Pérignon was actually desperate to fix the "mad wine," but (luckily for us) the fizzy stuff became a big hit with pleasure-loving French royals—and the bubbly we know and love was born.
