Aside from the innate romance of lightly falling snow and a cozy crackling fire, there are many other perks to hosting a winter wedding, and chief among them is selecting a seasonally-inspired cake flavor. Here are four cake flavors to enhance a wintery wedding.
1. Caramelized Vanilla
Dessert doyen Kate Sullivan of New York City's Cake Power loves caramelized vanilla cake with salted caramel buttercream and whipped dark chocolate ganache for the cold-weather season. Sullivan's creations not only taste perfectly on-pitch for winter, they also look the part, ranging in design from multi-tiered cakes with intricate, gilded brocade patterns to confections adorned with woodland flora and fauna.
2. Grand Marnier
Ceci Cela Patisserie ace Sandra Dupal approves of French wedding cakes enlivened with the citrusy flavor of Grand Marnier. The cognac provides dimension to simple cake flavors as well as what Dupal dubs a "holiday feel." Ellen Baumwoll of popular confectionaries Bijoux Doux and Betty Bakery in Brooklyn seconds the suggestion, adding that brandy can also be used to amplify the flavor of a wedding cake.
Baumwoll also loves full-flavored cakes for the season, saying, "For winter weddings, I would recommend a rich flavorful cake like a hazelnut-almond cake filled with dark chocolate ganache, mocha buttercream, and raspberry preserves."
4. Ginger Spice
For couples that think spice is nice for a winter wedding, Patti Paige of Baked Ideas in New York City recommends ginger spice cake. "A gingery spice cake with real maple frosting and vanilla bean icing is another favorite in winter. I love serving it along with a little cup of strong hot chocolate," she says.
