This bright and cheerful wedding cake is just what I needed on this dreary wintry day. Pastry chef Michelle Maric of Sugablossom Cakes in Sydney, Australia, was asked to create a summer-themed wedding cake. "I jumped at the chance to create something bold using summer fruit–inspired colors," she says. To create the zingy design, Michelle covered the cake tiers in chocolate ganache and hand-dyed fondant in varying shades of citrus and raspberry. Next, she cut thin strips of fondant and carefully placed them around the tiers; hand-wired gumpaste flowers were the finishing touch.
