Five-Tier Wedding Cake with Red Trim

The couple's 270 guests gathered for an outdoor cocktail hour and enjoyed passed hors d'oeuvres and a serenade by a mariachi band, a nod to Richard's heritage. The party then moved inside Rosine Hall, on the arboretum's grounds. There, they enjoyed a first course of spinach salad followed by a main entrée of a trio of stuffed chicken breast with mushroom-Madera sauce, seared sea bass with roasted red-pepper cream sauce and brochette of large shrimp and sea scallops, served with wild-rice flan and vegetable bouquetiere. For a sweet finaleé to the meal, Julie and Rich sliced into a five-tier white-chocolate mousse cake with fresh raspberries.
