Choosing Hors d’oeuvres

Hors d’oeuvres during the cocktail hour are irresistible—and, for many guests, the best part of the meal. We asked Chef Christophe Holmes of Glorious Events, 770-455-6600, gloriousevents.net, a catering and event-services company, for his best tips. "Offer a wide selection by including meat, poultry, fish and vegetarian options," Christophe says. "Don’t be afraid to go out on a limb and add a few creative twists," he says—such as chickpea fritters with avocado sauce, or beef tenderloin slices on bruschetta with honey Dijon mustard (left). Recently, his biggest crowd-pleasers have included grilled chicken satay with peanut sauce, as well as mini crab cakes.
