Dinner, catered by the ranch, featured a buffet offering barbecued ribs, game hen, sautéed vegetables, and spinach salad. For dessert, guests were treated to a choice of cakes in six different flavors, including red velvet, coconut, and lemon-strawberry (all from Baby Cakes of Vail), and a s'mores buffet set up next to a fire pit.
The rest of the night was filled with dancing and exuberant toasts. "We checked the calendar in advance to make sure there'd be a full moon," says Katy. "It looked absolutely gorgeous over the lake."
