Caterer tip question!
Posted: Feb 12, 2011 3:49 PM

So we are using a caterer who we got a referral for from DF's work (DF's boss owns a large garden and sells veggies to the caterer)

When we talked to the caterer about our contract he said he was deducting the gratuity as a referral credit (like a discount)

So, I'm a little confused as to if we should still pay gratuity or not? I feel weird not paying it!

Hello,

Congratulations on your engagement and upcoming wedding. The simple answer to your question is to talk to the caterer. Many catering contracts have a gratuity built into them for the servers, bar tenders, etc... However, in this case, it sounds like the caterer is paying that out of his own pocket. Quite frankly, there are times when I really wonder if that gratuity fee is actually making it into the pockets of those who really deserve it.

A lot of caterers don't pay that built in gratuity to the staff. I've worked for several - one would assume that's where it goes, but often it doesn't.

OP - Regardless of that, I would follow Howard's advice.

It honestly sounds like a sly way for them to get away with something. They tell you "We will give you a discount by not making you give us a tip". Then you feel bad and you end up giving them a tip. At the end, there really was no discount. Yes, very sly indeed.

I don't have much to say on the subject--but I used to work at a resort as a server where I would wait on the same families for an entire week for 3 meals a day. A part of their package was a "15% gratuity" which they assumed made it into our pockets. In reality we never saw the money but we couldn't tell them "hey, we don't see that money so remember to leave an envelope with our name on it."

I guess I'm just saying I wouldn't worry about not leaving a tip if they are saying they are covering that cost--because most likely it wouldn't be making it to the servers, bartenders, line cooks, prep workers, etc anyways.

I still remember the bride who once left us leftover cookies and you could tell this was sort of supposed to be an "extra" on top of the "gratuity" she had paid for--but we actually only got the cookies--at least they were delish.
