NWR St. Patrick's Day recipes anyone?

I am trying to come up with a menu for tomorrow and am having a bit of a hard time since I am something of a picky eater.  :)  So far I think I am going to make Irish potato boxty and am poring through recipes looking for an easy-ish one but I'm still looking for some kind of chicken and/or veggie thing and a dessert.  If anyone has any ideas or great recipes I would love to hear them!

And Happy St. Patrick's Day to you all!  :)

Ooh!  Don't forget Irish Soda Bread!  Here's my favorite:

3 cups flour

1/2 tsp. baking soda

2 T. sugar

1/2 cup rasins (I use more!)

Mix all of these together until the rasins are well-coated; make a well in the middle and add:

1 egg, beaten

1 cup buttermilk

2 tablespoons melted butter

Stir until the dry ingredients are combined, then turn out onto a floured surface and knead to even everything out.

Bake at 350 (the recipe says in a cast-iron skillet, but I usually just use a cookie sheet or my baking stone) for 40-45 minutes.

I got this recipe from www.allrecipes.com, it's called "Grandpa McAndrew's Irish Soda Bread" and everyone in my family LOVES it!  It's great toasted with a little butter!

  1. In a chilled pint size glass pour beer add food coloring and mix inches Enjoy!
  2. "Slàinte!" (pronounced "slawn-cha"),.
  3. As the Irish would say. The traditional toast is the Irish equivalent of cheers and means "good health" in Gaelic.

I have a little mini Irish cookbook... some of the recipes are Irish Stew, Beef and Guinness Stew, Potato Soup, Potato Cakes, Boxy Pancakes, Apple Cake, Trifle, Bread Pudding, and Porter Cake...

But there are no chicken recipes surprisingly, and the only veggies are in the stews and soups.  :)  

Let me know if you want any of those and I will type them up!
