While the world can't seem to stop talking about the iceberg-sized diamond adorning Mariah Carey's finger, the pop diva has been keeping rather mum about her recent engagement to her newly-minted fiancé, James Packer. But now, Mimi is officially breaking her silence and can't stop gabbing about her upcoming wedding plans, her billionaire beau, and yes, even that supersized sparkler.

Just last week, Packer proposed to Carey with a rock seen around the world. The engagement ring the Australian businessman slipped on Carey's finger measures in at a whopping 35-carats, causing everyone to stop and stare. So what does the Grammy-winner have to say about her new emerald-cut stunner? "It's so heavy I can't lift my arm up!" Carey joked with E! News. "It's a nice chunk." Uh, that's putting it mildly...

But even with the glare off of that dynamite diamond, the "We Belong Together" singer can't take her eyes off her sweetheart. "He's an exceptional person... It gets more romantic by the day," she said of their year-long relationship. "He's a generous person as well, and a good-hearted person. He's young at heart, but also serious. And I mean that in the best way."

Despite that only a week has passed since Packer popped the question, this bride-to-be is already in the nitty-gritty of planning, with the hopes that she can marry her love "somewhat soon." In fact, she's already got her wedding dress all picked out! "I am very excited about the dress, but I don't want to talk about it yet, as I have to have my first fitting," Carey slyly said. (We've heard that 14K gold fabric butterflies are involved... Would you expect anything else from this singing diva?)

As for where this to-be-wed twosome plans to tie the knot, rumor has it that the couple will be heading down under.for an Australian wedding on Hayman Island, with guests arriving via Packer's private planes. But Carey insists she'll be keeping things small and intimate this time around. "We are not doing a big wedding because he did two big weddings, and it's kind of like, I've done a big wedding [too]... We would rather make it beautiful but humble." Flying in wedding guests to the Great Barrier Reef on the groom's fleet of private plans? That sounds just about as small as Carey's 35-carat engagement ring!
