To help you plan the perfect party (with the tastiest bites), we asked three top caterers to give their best tips for creating memorable wedding meals. New Classics
Chef John Karangis of Union Square Events in New York City, caters to couples who are looking to upgrade the classics on their menu, not re-invent the wheel. To create a more exciting version of a traditional menu, Karangis suggests finding twists on tried-and-true dishes. For example, swap out the mozzarella in a caprese salad for a rich burrata, or serve of-the-moment branzino in place of halibut.

Foodie's Paradise
Elaina Vasquez, caterer at Chicago's Boutique Bites, says the trick to serving a memorable, restaurant-style menu is all in presentation. Give a salad with brie a kick with persimmon, or pair glazed doughnuts with an elevated gelato flavor like hazelnut.

Meatless Marvel
We're going to let you in on a little secret: A menu doesn't have to include filet mignon to be hearty and satisfying. Adam Hiner of Eco Caters in San Diego designs menus that will appeal to a vegan appetite with tasty dishes like grilled polenta or lentil cakes. Pack each dish with veggies to provide lots of flavor and heft.
