Halloween may be over, but the fall season is not — which means Starbucks is still serving everyone's favorite autumnal coffee drink: Pumpkin Spice Lattes. If you're PSL-obsessed, try incorporating the festive formula into your signature cocktail at your fall wedding.
Parker Boase and Gregory Lucas of New York City's creative mixology company Liquid Lab are sharing their suggestions for turning the Pumpkin Spice Latte into a special beverage your guests will rave about for years to come.
Incorporate Pumpkin Purée
Pumpkin purée adds an unexpected, rich accent flavor for reception cocktails. PopSugar's Pumpkin Pie Cocktail uses pumpkin purée to imitate the flavor of the Thanksgiving dessert (click here for the full recipe). You can also add a dollop of pumpkin to a basic eggnog recipe for a drink which can be created in large batches before your big day and served out of a decorative punchbowl.
Add a Spoonful Of PSL-Inspired Preserves or Jam
Utilizing jam in alcoholic drinks in place of muddled or fresh fruit is a big trend in mixology, according to Boase and Lucas. "You can use pumpkin jam as a sweetening agent to any of your favorite cocktails to add some seasonal spice," says Lucas. Vodka, whiskey, and dark rum-based drinks work best with a spicy pumpkin jam. Lucas also suggests incorporating a spoonful of it into a Manhattan for an autumnal take on the classic. For those who favor more fruity fare, the jam can be used to replace the customary Triple Sec in a Cosmopolitan.
Mix in Pumpkin Nutmeg Syrup
One of Boase and Lucas's signature blends is Pumpkin Nutmeg Syrup. By combining 4 cups of sugar, 4 cups of water, 2 tablespoons of pumpkin spice, and 2 teaspoons of nutmeg over heat for 30 to 60 minutes, you'll be able to concoct your very own seasonal syrup. If you're handy in the kitchen, prepare a batch the week before your wedding to be used on the big day; however, your hired bartender or mixologist may be able to provide the service for you, given the recipe in advance. Use the seasonal syrup as a substitute for simple syrup in any cocktail that calls for the ingredient like a Hot Toddy or mulled wine.
Serve the Ultimate Pumpkin Spice Martini
One of Liquid Lab's most prized recipes is the Pumpkin Spice Martini, a refreshing and frothy mix fit for the season. To make it: Crush 2 slices of ginger in the glass end of a Boston Shaker, and follow by adding 2 ounces of dark rum, one half ounce of fresh lemon juice, 1 ounce of pumpkin or nutmeg-infused simple syrup, and one egg white to the cup. Shake away, strain into your vessel of choice, and be prepared to enjoy the adult version of your family's pumpkin pie dessert.
