A good rule of thumb: Wherever Jennifer Aniston vacations is a pretty sweet place. Indeed, Los Cabos is one of Mexico's most popular destinations for celebrities like Jen, Fergie, Lauren Conrad, and George Clooney, since it's an easy escape from L.A. And for all the same reasons, it's also perfect for honeymooners—think five-star resorts, fantastic food, and nearly perfect year-round weather. (It gets a little hot in the summer, but never so hot that you can't sit by the pool.)

I'm just back from one of the newer hotels to hit the Cabo scene, and one that attracts loads of couples: Capella Pedregal. The entrance to this beach resort, just on the fringe of Cabo San Lucas town, is one of the most dramatic I've ever seen. It took a team 36 months of burrowing through a mountain to get to the oceanfront 24-acre hotel site. Picture entering a giant cavern, driving 300-meters, and then voilĂ —there's nothing but true-blue vistas, a sweeping open-air lobby, and yes, a salty, strong welcome margarita waiting for you. (Actually—and this is beyond cool— they radio in before you drive through the tunnel to tell the team your beverage preference—seriously!)

The 96 ocean-facing rooms, set in a series of sand-colored buildings that seamlessly blend into the mountainside, are beyond spacious, starting at 820 square feet. All have balconies or patios with plunge pools, and some categories, like the premium suites, come with living rooms and little touches like binoculars for whale-watching. The beachfront suites are my personal favorite, since you can literally hear the waves crashing at night by your personal fire pit. And no matter where you stay, every day at five, you come home to two Coronas and fresh guacamole and chips for a little happy hour en suite.

What to do? Breakfast is all about the ridiculous buffet of buttery croissants, cheeses, eggs to order (do the huevos rancheros with red sauce), and a juice blender bar for healthy types. (There's a Bloody Mary bar, too.) Then you move over to lounge by the infinity pool, and order frozen mango margaritas and fresh crudos (sashimi) at the swim-up bar. Food, as you might have guessed, is a big thing here, and a lot of couples sign up for a tequila tasting to learn the difference between blanco, anejo, and reposado. This isn't your college swill, FYI; some bottles at the resort sell for hundreds of dollars, and good tequila is just like excellent Scotch. Or you can try a ceviche (beginner) or mole (advanced) cooking class with Chef Alex. Definitely make reservations before you get there for El Farallon, one of Cabo's hottest tables. This intimate open-air restaurant is literally carved into a cliff, and torches are strung out along the walkway to your table. The sunset views are spectacular, and the menu is simple and delicious. Walk up to the kitchen, select one of the many catches of the day (mahi mahi, sea bass, parrot fish, or lobster), and the chef will grill it right up with sides like perfectly charred corn. (P.S.: Ask Marcello to pair your dinner with a Mexican wine, like their special Capella blend. Yup, Mexico has fantastic wines, many from Baja California. You'll get a lot of great cabs, merlots, and chardonnays.)

Also book in to the 10-room Auriga Spa, where every treatment kicks off with a foot massage and scrub in a domed Moroccan-style room, using fresh rosemary and basil from the garden. Simply amazing. Depending upon the phase of the moon, different treatments are offered—e.g.., a "cleansing" lymphatic drainage massage is available during the waning moon, representing autumn, a time to heal the earth and rejuvenate. Sounds New Age-y, but after days of overindulging, I walked out of Auriga feeling like a new human being, so I'm not arguing. Rooms from $525.
