Andres has partnered with Ridgewells Catering to create Jose Andres Catering with Ridgewells, featuring the same totally out-of-the-box food that he's known for. Some examples of items on his seated dinner menu: Quail Two Ways, with anchovy foam, mango ravioli, and demi glaze, Pineapple Salmon, with green sauce and crispy quinoa, and a "Hot Chocolate" dessert with sweet espuma, pear sorbet, and hazelnut.
