You don't need milk to create a mouth-watering wedding cake. Jane Lockhart, owner of Sweet Lady Jane, created a vegan red-velvet cake for Ellen and Portia's wedding that was dairy-free and delicious. "It was fun for me because it was a challenge to make a cake that was vegan and beautiful," she told me.

Thinking about going dairy-free for your big day? Vegan cakes are perfect for brides who are lactose intolerant or who are trying to follow dietary restrictions. Just be sure to find a baker who has experience creating dairy-free confections—not everyone knows how to bake a vegan cake—and have a tasting before the ceremony to be sure you are happy with the cake's flavors. Creating elaborate designs with dairy-free frosting is difficult, so Jane also suggests asking your baker to stick with straightforward decorations similar to the leaf pattern pictured on this wedding cake.
