Natural menu tips from the TODAY show wedding caterer

How would you like to have the next Mr. Big serve at your reception? You might if Great Performances caters your wedding. The catering company, which was founded in 1979 as a waitress staffing service for women in the arts, continues to provide flexible employment for actors, dancers and artists (Sex and the City actor Chris Noth is an alum). And as if this isn't enough, the company also has a commitment to serving natural, locally-sourced food, using produce from their own organic farm to create many of their dishes. Yesterday, while admiring locally sourced 100 Mile Menu they created for the TODAY show wedding, I got a chance to chat with CEO Liz Neumark about.. her best tips for serving natural food at your wedding:
Make a Fresh Start: Neumark says that brides are often her most environmentally conscious customers because a bride often sees her wedding as a chance to begin a new pattern of responsible eating.
Stay in Season: For a delicious (and inexpensive) natural meal, plan your menu around foods that are locally available and in season on your wedding date. Ingredients will be at their tastiest and least expensive at their seasonal peak.
Don't Be Too Organic-Obsessed: You don't have to go all-organic to serve natural, eco-friendly food at your wedding. Local farmers can be a good choice even if they aren't "organic": some companies practice sustainable farming but haven't gone through the process to get the necessary certification.
