We give Nine Cakes a ten

At a crowded craft fair a few weeks ago, I was tired, hungry and eager to escape, when I stumbled upon a booth for the New York City based Nine Cakes. The arresting display of bite-sized cupcakes in tempting flavors like lemon orange blossom, chocolate strawberry and cardamom coffee captured my attention, and, in the name of research, I simply had to have one. I was not disappointed; the frosting was creamy and sweet, but not too sweet, and the cake was rich and moist. I was thrilled to learn that Betsy Thorleifson, the baking wonder behind the teeny creations, also does wedding cakes—like the beautiful red velvet cake with cream cheese frosting pictured. Whether baking cookies, pies or cakes, Betsy makes every caramel, fruit puree, citrus curd and pastry from scratch. Currently, she is only delivering to the tri-state area, but she hopes to start shipping her cakes soon. In the meantime, take a bit of wedding inspiration from Betsy and consider serving bite-sized cupcakes at your reception. Or, match your cake and a variety of other dessert offerings to your decor, like Betsy did for the yellow wedding shown here.
